Today I headed to Zurich to check out Bablina Döner - a small take-away spot with a couple of standing tables out front, tucked into the neighborhood between a kiosk and a head shop.

The clear highlight here is the spit: Yaprak meat, meaning thinly sliced, layered veal or beef, slowly cooked over an open charcoal fire. You can see nicely in the video how the spit gets sliced super thin by the machine - that's what creates those characteristic small, slightly crispy pieces instead of big chunky slices. The result is meat that's beautifully roasted on the outside and juicy on the inside, with a nice seasoning that's never overpowering. It all gets wrapped in a fresh, crispy white bread, plus a generous amount of fresh veggies: purple and white cabbage slaw, a bit of tomato, lettuce, and a light sauce that rounds off the meaty flavor perfectly.

The bread itself is also on point - nice and airy, with a crispy crust, not too dry and not too soggy, exactly how it should be. My take: the meat genuinely tastes amazing, and the combo of bread, meat, and fresh veggies works really well together. This isn't an overloaded döner drowning in sauce, but a clean, honest build where you can actually taste the quality of the ingredients.
